Aged scamorzone cheese is a semi-hard stretched-curd cheese, similar to our best-seller scamorza. A masterpiece of artisanal cheesemaking, the traditional “severed head” scamorzone presents a different consistency than the regular scamorza: a smooth, waxed and more yellow surface hides a compact, fibrous semi-soft paste. Our aged scamorzone can be paired with seasonal vegetables or traditional Apulian cold cuts offering a versatile ingredient in your kitchen.
